What's cooking, Library Anne? Today I will share the recipe for glorified rice. In case you want to make it for Mother's Day.
1 1/2 c. cooked rice, cooled
1/2 c. sugar
1 regular can of crushed pineapple, drained
1/2 tsp. vanilla
1/2 c. mini marshmallows
1 1/2 c. Cool Whip
walnuts pieces, not chopped
cherries for decoration
Mix rice, sugar, pineapple and vanilla. Stir in marshmallows and add Cool Whip. On the top, create flowers with half cherries as the center and walnut pieces as the petals. Cool and serve.
I sort of do this recipe by guess and by golly since I am not exactly sure what a regular can of pineapple means. But no matter how you stir it, this is pretty good. And certainly one of those vintage 1960s recipes.
